What you need
- 250g wholemeal self-raising flour
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ground mixed spice
- 85g light muscovado sugar
- 100g Ambrosia Custard Coated Apple Flakes
- 125g tub low-fat yogurt
- 125ml skimmed milk
- 3 tbsp sunflower oil
- 1 egg, lightly beaten
- 100g icing sugar
- 1-2 tbsp apple juice
- muffin tin
How to make it
- Preheat the oven to 180°C/350°F/Gas 4 and line a muffin tin with 8 paper cases.
- Sift the flour, baking powder, cinnamon and mixed spice into a mixing bowl, then stir in the sugar and Ambrosia Custard Coated Apple Flakes.
- In a separate bowl mix together the yoghurt, milk, oil and egg then slowly add to the dry mix and gently fold in until combined.
- Spoon the mixture equally into the muffin cases then bake for 15-20 minutes until risen and firm to touch.
- Mix together icing sugar and apple juice and use to decorate the cooled muffins.
Hints and tips
- For a really quick version of this recipe try using a muffin mix and just stir through the Ambrosia Custard Coated Apple Flakes before baking.
