Apple and Custard Lattice

A lovely festive dessert with mincemeat, apple and Ambrosia Custard baked inside a puff pastry lattice.
Serves 4
What you need
- 1 sheet ready rolled puff pastry
- Ambrosia Custard
- dessert apples, thinly sliced
- mincemeat
- caster sugar
- 1 egg yolk, beaten
- baking tray, lightly greased
How to make it
- Preheat the oven to 200°C/400°F/Gas 6
- Place the pastry onto a baking tray and lightly prick with a fork.
- Spread a layer of Ambrosia custard down the centre of pastry.
- Top with sliced dessert apples and spoon some mincemeat over the top.
- Cut diagonal slits into the pastry flaps which are remaining on each side. Take away the corner pieces of pastry as these aren’t needed then fold over the remaining pieces to form a lattice effect and seal in the contents.
- Brush with a beaten egg yolk and sprinkle with sugar.
- Bake in oven for 20-25 mins until the pastry is well risen and golden.
Hints and tips
- Add a pinch of cinnamon to any remaining custard for added festive flavour when serving.
