Caramelised Onion Soup

Caramelised onion soup is a lovely hearty starter for your festive dinner.
Serves 4
What you need:
- 2 tbsp olive oil
- 4 onions, sliced
- 2 garlic cloves, chopped
- Beef Oxo Cube
- 4 French bread or ciabatta slices
- cheese, grated
- olive oil
- saucepan
via Asda, Sainsbury's,
Tesco and Ocado
How to make it:
- Heat the oil in a pan then add the sliced onions and garlic and cook gently for 10 minutes or until the onions are soft, browned and caramelised.
- Add a Beef Oxo cube made up with 1 pint of hot water and simmer for 20 minutes.
- Top 4 slices of French bread with grated cheese then place under the grill until the cheese melts.
- Serve the soup in warm bowls topped with the cheese toasts.
Hints and tips:
- Grated cheddar works very well but if you don’t fancy the cheese miss out that step and dunk the bread straight in the soup… delicious.
