Rice Pudding Truffles

A twist on the usual Festive chocolate truffles, with Ambroasia Rice Pudding inside.
Serves 8
What you need
- 1 can Ambrosia Rice Pudding
- 2tbsp of Irish liqueur
- 100g milk chocolate
- Ice cube tray
How to make it
- Mix the Ambrosia Custard and Irish Liqueur together in a bowl.
- Take a teaspoon and fill each cube of an ice cube tray with the mixture.
- Place the tray in the freezer for an hour to semi freeze.
- Melt the chocolate in a bowl and drop each of the cubes into the bowl to cover them with chocolate. Transfer to a plate and place in the frdige for the chocolate to set.
- Keep in the fridge for an hour to defrost in the centres and then serve with coffee or tuck in whenever you feel like it.
Hints and tips
- Have a go with other flavours, coat with dark chocolate instead of milk or add cinnamon into the rice instead of Irish Liqueur.
