Cottage Pie with a little tomato twist.
Serves 4
What you need
- 5 large potatoes
- 500g beef mince
- 1 onion, diced
- 2 cloves garlic, finely chopped
- 200ml beef stock made with a beef Oxo Cube
- 15 baby tomatoes, cut into quarters
- butter
- milk
- handful of grated cheese
- small casserole dish
How to make it
- Preheat the oven to 200ºC/400ºF/Gas 6.
- First of all peel and cut the potatoes into chunks then add them to a pan of boiling water and simmer for 20 minutes.
- Place the mince in a pan and gently fry until browned then add the onions and garlic and fry for a further 5 minutes.
- Add the tomatoes and beef stock and simmer gently for 15 minutes.
- Once the potatoes are nice and soft drain and return to the pan then mash with a little butter and milk.
- Place the mince mixture into the casserole dish then top with the mashed potato.
- Draw some nice fork lines on the potato topping then cover with a thin layer of cheese.
- Place in the oven for about 20 minutes or until piping hot and the cheese has melted.
Hints and tips
- Try adding a can of baked beans instead of the tomatoes for a tasty change.
