For a great deli style sandwich filling, take some diced cooked chicken and a few chopped tomatoes or roasted peppers and mix with a couple of spoons of Branston Pesto Mayo.

Serves 1

What you need

  • 1 ciabatta roll
  • 100g cold cooked chicken, diced
  • 1 chopped Tomato or 1 Chopped Roasted Pepper
  • 3 tablespoons of Branston Pesto Mayo

How to make it

  1. Slice the ciabatta in half lengthways.
  2. Fill with diced cooked chicken and tomatoes or peppers.
  3. Spread over the Branston Pesto Mayo.
  4. Serve with a mixed salad

Hints and tips

  • For a vegetarian altenative substitute the cooked chicken with some cooked Quorn Style Chicken Pieces.
  • For a change try this filling in a wrap or on a lightly toasted bagel.
