A tasty savoury pancake with a tomato and mediterranean style vegetable filling.

Serves 4

What you need

  • olive oil
  • courgettes, sliced
  • red pepper, sliced
  • red onion, sliced
  • Homepride Creamy Tomato and Herb Pasta Bake Sauce
  • ready made pancakes (or make your own)
  • non-stick frying pan

How to make it

  1. Add a little oil to the pan and sauté the sliced courgettes, peppers and onion.
  2. Once softened, add the Homepride Creamy Tomato and Herb Pasta Bake Sauce and simmer gently until heated through.
  3. Heat the pancakes as directed and place the filling in the centre of each pancake and roll up before serving.

Hints and tips

  • Try serving with some grated cheese sprinkled over the top.
